- Speckled Trout The heritage variety that will create an eye-catching display in the garden & on your plate! The lettuce ‘ Speckled Trout’ is an old Austrian Heritage variety of Cos lettuce. This lettuce is very cold hardy & slow to bolt so can be cropped for longer. Unlike other lettuce, it has unusual & attractive 'splashes' of red on the bright green leaves give rise to the name ' Speckled Trout', as it resembles the skin of the aforementioned fish.
