Baileys is an Irish whiskey and cream based liqueur made by Gilbeys of Ireland and currently trademarked by Diageo. The Irish cream was introduced in 1974 and the brand name Baileys was based on the London hotel. A combination of Irish whiskey and cream are infused together to create a silky velvety liquor. The cream used in Baileys is delivered daily in insulated tankers and processed on the day it arrives and the whiskey is a triple pot still blend, made to a proprietary specification. The sugar comes from sugar cane and beet with the distinct style of Baileys being derived from a unique proprietary cocoa extract recipe giving Baileys its chocolate character and essence.
