This elegant crisp gin has been two years in the making as the aim was to make the finest gin in the world & to do this you need the finest base spirit. Not many people know that you need vodka to make gin. After much experimenting, Chase Distillery turned organic cider apples, from the estate, into vodka & used this beautiful product to make the gin. Having been through our copper pot still & column, with 42 bubble plates, twice & then the pretty little Carter Head style gin still, the finished gin is distilled over 100 times. This gin is complicated. The taste is the true taste of junipers highlighted by the citrus & the sweetness of the apples, elderflowers & hops. It has a beautiful & textured mouth feel due to the luscious organic apples & the naturally pure water taken straight from the aquifer that runs underneath our orchards. If drinking this gin with a tonic serve with a slice of apple to bring out the flavour. The botanicals: Juniper, Coriander, Angelica, Liquorice, Orris, Orange & Lemon peel, Hops, Elderflower & fresh Bramley apples. ...

Nose: A deep earthiness of lemon with zesty citrus top notes. Palate: Thick & oily with a welcoming sweet creaminess, lemon meringue pie & subtle notes of vanilla. Finish: An intense citrus pithiness with lingering lemon zest. The spirit is diluted with water originating from Chase's bore hole from the bottom field of their farm. The diligent 72 hour maceration which follows with dried Eureka Lemon peel helps enhance the refreshing citrus notes & adds a sumptuous viscosity to the vodka. The mouth feel develops further as the alcohol intensifies the pectin into the liquid, at the same time imparting the subtle yellow tinge to the vodka. After 10 days of being stored in tanks, the vodka is rested & then ready to be bottled. ...
