All the grapes were destemmed before being transferred to closed tanks for a two-week alcoholic fermentation. The temperature was limited to 28-30°C & the wine pumped over daily. Malolactic & ageing took place in stainless steel, with bottling at 8-12 months. Taste Very attractive, open aromas, principally pepper, plum & raspberry, with a juicy, medium-bodied palate that combines vivacity with depth.
