Expressive blackberry fruit, quite ripe & juicy but combined with characteristic complex & earthy Gevrey terroir flavours. Lovely depth & concentration. Pierre Naigeon, who inherited this 120-year old estate in the mid-nineties, believes passionately in sustainable farming, without the use of any herbicide. He looks to produce wines full of fragrance, revealing the natural terroir. The average age of his vines is remarkably high, mostly over 50 years. This ensures deep roots, nourishing the vines from many different lays of soil, to produce the most complex wines, & reduces the natural level of cropping, providing more concentrated wines. Manual harvest followed by severe sorting on the sorting table. The vinification is done by gravity (without use of pump), with indigenous yeasts from the grapes. Cold maceration is done before fermentation for 9 days, followed by natural fermentation (20 days) & ageing 'sur lies' for 12 months in oak (10% new). Unfined & unfiltered. From two parcels of land totalling 1 ha where the average age of the vines are 50 years old. The vines are Guyot trained. Organic fertilizers are used but the vines are never treated with herbicides. Green harvest before & manual grape selection in the vineyard. Hand harvest Serve with grilled meats, poultry dishes with mushrooms, veal, fresh cheeses & fine cheeses.
