It is hard to imagine the taste of Cyprus in springtime bottled, but that is exactly what the delicious local liqueur Filfar tastes like! Somehow, one sip of Filfar brings happy memories of heavily-laden orange trees with their fruit glistening in the warm sunshine & contrasting against the dark colour of the leaves. Filfar has been an increasingly popular drink since it first appeared on supermarket shelves more than twenty years ago & to the delight of many who discover it during a visit to Cyprus, it is now available in an increasing number of countries. At one time, the recipe for Filfar was at one time only known by one person
- Takis Philippou, who was working for the British Army in Famagusta in the 1940s, making the cookhouse a range of jams & marmalades. As a young lad he had watched his grandmother making the orange liqueur that her ancestors had learned how to make from the monks at Kantara. Years later, he decided to have a go at making the liqueur once again, & failed miserably, but after many more 'hit & miss attempts' that were eagerly watched eagerly by his mother, he had success! This time he wrote down the recipe rather than committing it to memory!
