Dense crimson with violet hues at the rim. Distinctly Cabernet! The nose is a complex amalgam of blackcurrants, plums, cassis, black olives & chocolate. The palate is deep, complex & brooding with layers of flavour. Blackberry, dark plum, mulberry & cassis are supported by notes of mocha & graphite. The rich & round mid-palate is backed up with a core of minerality & an abundance of super fine tannins. The finish is long & pronounced with classic balance & structure. The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood & experience tells us that this fruit will typically come from the oldest vines growing in the very shallow terra rossa soil over limestone on the Wilgha & Neilson's Block vineyards. These vineyards are linked by Ravenswood Lane. Early spring rains in Coonawarra after a dry winter promoted excellent budburst & flowering. The cool conditions in February allowed good flavour development before the heat of March hastened ripening. The vintage yields were below average, with the fruit showing intense colour & rich ripe flavours. The grapes were picked at optimum flavour & tannin development & balanced natural acidity. Once in the winery the utmost care was taken to preserve the fruit characters developed in the vineyard. The wine was then matured for a further 18 months in tight grained French oak barriques.
