Colour: Garnet red. Nose: Red fruit aromas, mainly Morello cherries. Palate: Well-structured, with sustained tannins. Perfect with grilled or roasted meats, especially lamb. Soil: Soils are made up of shingles, chalk & clay. Harvest: The grapes are harvested at good maturity. Vinification: The grapes are destemmed. Vatting lasts around 3 weeks with several pumping-over & releases which ensure a good extraction of tannins. Maturing: The wine is aged in vats & is bottled during the spring which follows harvesting.
