The pressed juice was then cold settled before being cool fermented in stainless steel. Carefully selected yeasts were used to add complexity to the blend & to retain the fresh fruit characteristics from each of the blocks. After the completion of fermentation the wine was carefully balanced & prepared for bottling. Limited stock. ...
