The base of the Saint Aubin Agricole White macerated with local 'chamarel' whole coffee beans in an outside warehouse for between 21 & 32 days, depending on seasonal climate change. Sugar cane syrup is added to reduce the abv to 40. On the nose it retains a creamy vanilla texture from the rum base, pure intense coffee, a small hint of caramel & walnuts, whilst still retaining the herbaceous & grassiness texture of the rum. On the palate pure coffee enriched with hints of nuts & vanilla with a rum after-taste & a tannic bite. It is distinctive in character due to being a coffee agricole rum as opposed to a coffee liqueur. ...

Rhum agricole is quite different from other rum in that it's not made from molasses, which is a by-product of sugar production, but from the juice of freshly squeezed sugar cane. This is a very French way of producing rhum. St Aubin has been a sugar plantation since 1819 but only making rhum relatively recently. Distillation is carried out once in an alembic still with the first cane pressing only used. The rhum is un-aged. Due to this different technique the flavour profile of rhum agricole is very different to rum (aka molasses or industrial rum). The nose of St Aubin is massive with sweet sugar cane, grass & herby aromas. The palate is very smooth & supple for 50% & fresh cane juice is abundant. This is the St Aubin 50% infused with vanilla, sugar cane syrup is added which reduces it down to 40% abv. The vanilla pods used in the preparation of this rhum come from St Aubins own vanilla plantations. The nose is rich & luscious & abundant with vanilla. On the palate the vanilla is upfront with agricole notes still coming through. The sweetness balances the rum out completely & makes for a wonderful sipping vanilla rum over ice or perfect in a vanilla daiquiri. ...

Nestled in the highlands of St Peter in Barbados is St Nicholas Abbey which was built in 1658 & has remained unchanged for the last 350 years. It is only one of three Jacobean mansions remaining in the Western Hemisphere. This old plantation house sits in over 400 acres of sugar cane fields & has been fully restored to its former glory by local architect & current owner, Larry Warren. The rum is produced exclusively for the plantation by R. L. Seale. It is initially aged in oak Bourbon casks at 65% abv for the first 8 years, after which it is batched & re-barrelled into the same casks at bottle strength to be aged for a further 2 years at the Abbey. The 10 year old rum is bottled straight from the cask by hand in to a specially designed decanter which has an image of St Nicholas Abbey etched on to it. Each bottle is sealed with a mahogany & leather topped cork & hand engraved with a number & dated. Hand finishing this rum of such exceptional quality & provenance at the Abbey is truly reflective of its 350-year heritage. The rum is deep amber in colour with sweet aromas on the nose of fudge, vanilla, chocolate & cinnamon. The palate is incredibly smooth with notes of dried fruits, oranges & spice, the finish is long & silky smooth. Overall, St Nicholas Abbey will be loved by rum aficionados as well as being a great introduction to the premium rum category for whisky & Cognac drinkers. Here's a rum with absolute classic Bajan balance & finesse. Mellow sweetness, cleanliness & poise. The nose is mellow soft with some soft fruits & the tobacco edge you get from maturation in quality oak. On the tongue it shows excellent structure with a very fine grip. There's sweet spice, juicy tropical fruits & a hint of creme brulee, elegant is the word. It was my rum of the show (Rumfest 2008) by some distance. Dave Broom 2008. ...
