St Stefanus is an unpasteurised high fermentation beer that has been refermented in the bottle. It is brewed using three different yeasts, one of which is the Jermanus yeast strain from Sint Stefanus. This combined with the unique process, gives the beer its distinct flavour. The artisan recipe takes three months to complete before cellar release, creating a smoth beer with a depth of flavour that cannot be duplicated by quicker, more modern methods. St Stefanus continues to mature & change with age, up to two years, allowing you to choose how you want your beer to taste. Developing character with age, your tasting experience will differ depending on how old the Blonde beer is when you choose to enjoy it. 3 Months: Fresh & Fruity St. Stefanus Blonde pours a light golden colour with a good head that stays, lacing the glass as you drink it. It has a sweet caramel nose, with aromas of grapefruit, green apple, clove, cinnamon, banana & balancing hints of peach. On the palate it is balanced by a touch of sweet caramel, finishing with a dry, hoppy astringency. 18 Months: Spicy & Aromatic The golden colour has deepened & warmed slightly & the head has a more delicate, mousse-like texture. The citrus fruit aromas of the young beer have become more like candied peel, with hints of apricot & mango. On the palate, the sweetness has matured into deeper, orange marmalade notes with flickering hints of vanilla, toffee & almond. Altogether it's rounder & more complex; a beer to savour.
