An elegant, classy wine with from 100% Sangiovese with amazing complexity & smooth texture. Only 789 bottles were made. Deep ruby red with purplish reflections. The bouquet jumps out of the glass & shows toast, coffee, chocolate, vanilla, red fruits. Long & persistent with intensity, develops slowly into moss, brushwood, iris, juniper & a little of wild fennel. It is a little astringent, warm, structured, fresh, glucid tannins. A taste of iris, undergrown, musk mixed with vanilla. Best allowed to breathe a good 20 minutes & enjoyed in large, tulip-shaped glasses. Food pairings: Game, roast, stewed & braised meat. Capannelle's first vintage in 1975 saw them producing wines that propelled them into a justly deserved place on the list of Chianti's best producers. The philosophy underlying production involves careful selection of clones, restricting yields, the utilisation of modern approaches both to cultivation & in the cellar, the use of new oak & close attention to every detail (from hygiene to materials of every type). An exceptional Grappa for quality spirit lovers! Nose: the sensations of apple, peach & almond make it promptly appreciable for the sense of smell. Palate: this grappa is light, not aggressive; it dries the palate without grating on mucous membranes. There are inkling such as chocolate, tobacco but, above all, the feeling of cleanliness is very clear. Aftertaste: long & pervasive; it is an excellent eating up with great character & pleasantness. Grappa is an alcoholic beverage, a fragrant, grape-based pomace brandy of Italian origin that contains 35%
- 60% alcohol by volume. It is made by distilling the skins, pulp, seeds, & stems left over from winemaking after pressing the grapes. The flavour of grappa, like that of wine, depends on the type & quality of the grapes used, as well as the specifics of the distillation process. In Italy, grappa is primarily served as a digestivo or after-dinner drink. Its main purpose was to aid in the digestion of heavy meals. Grappa may also be added to espresso coffee to create a caffe corretto, meaning corrected coffee. Capannelle, wine producers in Gaiole in Chianti, Siena, extends over about 20 hectares.
