An older style of gin pre-dating London Dry, Old Tom was born as a response to poor-quality alcohol being produced in peoples own homes in London. Sugar & strongly-spiced botanicals were added to make it more palatable & to hide the flavour of impurities in the spirit. Now we use it to create a more boldly flavoured gin, using some extra spice that is then balanced by a small amount of sugar. This is still by no means a sweet gin, rather a balanced one to produce a more rounded end profile. The tasting notes are well balanced. A subtle sweetness accompanies the orange & cassia notes. There is very little ethanol, considering its ABV. The citrus leans more toward bright lemon. The soft sweetness continues with rounded orange & spice notes to finish. Aromas give off a little alcohol on the nose. There are sharp pine notes & aromatic baking spices. Definite notes of orange.
