Dunkirk was one of the first ports of call in Europe for many explorers sailing back from the Orient, whose ships were laden with exotic herbs & spices. Citadelle Gin is made according to principles laid down in the original recipe. Although the production techniques have enhanced over the centuries, we still use the same 19 botanicals listed in the original recipe. Sugar and strongly-spiced botanicals were added to make it more palatable and to hide the flavour of impurities in the spirit. Now we use it to create a more boldly flavoured gin, using some extra spice that is then balanced by a small amount of sugar. This is still by no means a sweet gin, rather a balanced one to produce a more rounded end profile. The tasting notes are well balanced. A subtle sweetness accompanies the orange and cassia notes. There is very little ethanol, considering its ABV. The citrus leans more toward bright lemon. The soft sweetness continues with rounded orange and spice notes to finish. Aromas give off a little
