The notes of anis & dried ginger glide over fruit skins (pear & mango), creating an effect that is more tactile than fleshy. The finale stretches out & then comes to rest, calm, mature & diffuse. Nose: The immediate impression is of the mildness of the pure, airy, bright bouquet. A floral, fruity pastel tone then unfolds & quickly darkens into candied fruit, ripe hay & toasted notes, along with hints of licorice. Palate: The wine's opulence

While July was scorching hot, August was unusually cool & wet. The almost summery weather in September made the vintage possible by drying out the few patches of botrytis & maturing the grapes far more than usual. The harvest began on September 11 & lasted nearly four weeks.

This allows each new generation of winemakers to taste older vintages, to understand the history of wine, to ensure greater consistency of style & to observe how each vintage develops & matures with age. The cellar area dedicated to the storage of these older vintage wines is called OEnotheque (or, as the French say en 'o' teque) which means ' Wine Library'. Dom Perignon peaks at three distinct times during its life cycle, although the timing of the peaks may ary from vintage to vintage. The first peak ('phase de plenitude' in French) at about seven years, is the stage when the wine is at its most vibrant & the majority of the vintage is released into the market. The second peak usually occurs between fourteen & twenty years & is the stage when the wine takes on greater depth & vigour. Alain took over the running of the Michaud family domaine in 1973 & has steadily bought up small parcels of vines, increasing vineyard ownership in Brouilly & Morgon from 5 ha. to 12.5 ha. today. Some of the vines that provide fruit for his Brouilly date back to 1920 (50% are over 50 years old), producing wines with remarkable richness.
