Ki No Bi (The Beauty of the Seasons) is inspired by tradition & is distilled, blended & bottled in Kyoto. The gin is made in a recognisable dry style but with a distinct Japanese accent. Ki No Bi Sei, based on a traditional navy strength version & bottled at 54.5%, isnt simply Ki No Bi at a higher strength. The production method is the same as Ki No Bi: 11 botanicals are grouped by flavour into what we call the 6 Elements which are macerated & distilled separately, before being blended together with Fushimi water. However, the ratios are different in order to achieve the right balance; that higher concentration gives SEI its power from which the name derives. Strong & powerful at 54.5%, Sei can be used for a range of cocktails, being especially recommended in a Gin & Tonic for which it was awarded an IWSC Outstanding Gold Medal in 2018. ...

Following a deconstruction tasting of the 6 Elements of Ki No Bi, for many Japanese bartenders, the tea element was the most popular &, as a result, we were inspired to create Ki No Tea. Horii Shichimeien, growing & blending teas for 140 years, created a blend of gyokuro & tencha teas exclusively for The Kyoto Distillery to provide a sweet & creamy flavour. Bottled at 45.1%, Ki No Tea's packaging contains a design from a new hangi, created especially for our gin by Kira Karac. ...

Nose: Red fruits with light citrus, earthy peat smoke & hints of creamy sweetness. Palate: Redcurrant jam, cinnamon with layers of citrus, floral sweetness & coastal influence. Finish: Layers of cooked red fruits, vanilla, peat & lasting intensity. Am Brach, Gaelic for the mess, might seem a strange name for a limited edition single malt. That would be if you were not aware of the story behind this unique bottling; the delicious consequence of an incident in 2014 where two different Kilchoman expressions were mistakenly combined. The unnamed Stillman, whilst vatting casks, accidentally mixed Machir Bay (a core expression from Kilchoman) & Port Matured Kilchoman causing Islay Heads, General Manager, to describe the resulting whisky as Am Brach. The name stuck. A true one-off, never to be repeated, Am Brach has a somewhat complicated nine-year maturation, a vatting of bourbon & sherry matured Kilchoman combined with port cask matured in 2014, the whisky was then filled back in bourbon barrels for a further six years ahead a six-month finish in ruby port casks. ...
