This classic blend displays a festival of red fruit & spice aromas. The palate is bursting with rich black plum, cassis & spice. Long & smooth on the finish with supple tannins. 95% Merlot, 5% Cabernet Sauvignon. The grapes were harvested, fermented & matured in individual batches to capture the distinctiveness of each parcel. Fully destemmed grapes were fermented on skins & after extended maceration, each parcel was pressed & transferred to French & American oak barriques. Maturation for 15 months evolved the wines' character & flavour while softening the tannins. Each batch was assessed to optimise the expression of varietal personality & site characteristics in the final blend. Beautifully fragrant red berry & floral aromas combine with flavours of cherry, spice & earthy undertones on a finely textured palate. Enjoyable in its youth, this single vineyard wine will gain further complexity with time. 100% Pinot Noir. Bunches were delivered to the winery in small picking bins, where they were destemmed, lightly crushed, & cold soaked on skins at 10-12&176;C for 10 days. Ferments were hand plunged allowing gentle extraction of flavour, aroma & colour compounds. To ensure good tannin structure & savoury complexity, some batches were hot fermented to maximise extraction, while others were kept cooler to retain fruit characters. The wine was then pressed & run to French barriques where it underwent malolactic fermentation. The wine was left in barrel on gross lees until the following summer in our cooled cellars at which time it was gently egg white fined, minimally filtered, blended & bottled. ...
