Vineyard: Made primarily from cold pressed Merlot, the vineyard selected for this wine is nearly 20yrs old. Located at the forefront of a spur jutting out of the Voor Paardeberg Mountain, the berries are well exposed to sunlight. Exposure to sunlight is essential to eliminate any green flavours from the grape. The soil has a high clay percentage & this lends softness & volume to the wine. Great care is taken to ensure that the vines do not bear too great a crop or suffer from drought. This is done through green cropping of the vines & micro-irrigation. Both practices help to preserve the natural acidity, freshness & vibrancy of the grape aromas. Vinification: All our grapes are picked at optimum ripeness in the early hours of the morning. The grapes are then destemmed & chilled before they are pressed. This short supply from vine to press ensures minimal degradation of the fruit aromas & a very moderate extraction of colour. All free run juice is kept separate from the 'colour fraction' to ensure a deliciously subtle salmon colour. The juice is cold settled to remove any coarseness & fermentation is done in stainless steel tanks. The wine is 100% unoaked. The wine is aged on its yeast lees for 6 months to allow it to fill out & gain complexity. The wine is relatively light in alcohol & calories. ...

Perfectly clear to the eye, the spirit at 41% abv has impressively long legs around the rim of the glass. Very fresh but elegant on the nose, you are met by a wave of aromas, sweeter than you would expect from a rye spirit. First present are the sweeter characters of honey & butterscotch, which then give way to more savoury & spicy aromas of hazelnuts, fresh bread & white pepper. On the palate we are again first confronted by soft, sweeter characters as well as a lovely, more intense acacia honey flavour tinged with rich butterscotch, & a hint of liquorice. One of the Cape's original Signal Cannons rests where it was once used to communicate to farmers that a ship had arrived in Cape Town's Table Bay harbour. Farmers would then hasten to the docks to trade their wares, swop stories and receive mail. In recognition of
these brave pioneer farmers, we've named our wine after this symbol of their era. We hope you enjoy the wine. Vinification All grapes are hand picked on our farm then destemmed directly to tank. Some tanks are fermented as whole berries to promote a lighter, fruitier palate, while others are crushed to extract structure and spiciness. This combination ensures a broad spectrum of flavours on the nose and palate. After fermentation the wine is transferred to old 300Lt French oak barrels and the skins are basket pressed. Malo-lactic fermentation takes place in barrel after which the wines are racked. The wine spends a total of 12 months in barrel, after which it is bottled.
