Pinot Noir: Ay, Mareuil sur Ay, Louvois, Bouzy, Tours sur Marne, Chigny les Roses, Rilly, Ecueil. Chardonnay: Cramant, Chouilly, Cuis, Vertus. Pinot Meunier: Venteuil, Cerseuil, St Martin d' Ablois, Chavot. These villages are ranked at the very high level of 94 to 95% on the echelle des crus scale. Ideal as an aperitif, Champagne Ayala Brut can also match a whole meal. It will pair perfectly with seafood, scallops, lobster, crab, fresh or grilled fish, fish terrines, salmon or beef carpaccio.
