The sparkling Sebastian Rose wine is obtained from red berry vines. In the harvest a cryomaceration is carried out on the grapes, that is their maceration at a temperature of 4
- 5C centigrade, for around 24 hours. The white vinification follows, with fermentation at 13
- 14C for about a month.
