A full-bodied, complex & elegant Rioja from a parcel of old vines that surround an 800 year old olive tree on the estate. The wine is full bodied, complex & elegant with well-integrated oak & fine grained tannins. Rich ripe black fruits & a long finish. Grapes were hand harvested & carefully selected from our plot Vina del Olivo (surrounding a 1000 year old olive tree), that were put into 20 kilo baskets to transport them to the winery to be fermented in our 100HL French oak winemaking vats at 28-30°C for 10 days. We harvested our carefully selected Tempranillo grapes at optimum ripeness to achieve a high level of aromatic extraction & a good concentration. The grapes are held in stainless steel tanks at low temperature to prevent the start of fermentation. The juice is removed (saignee or bleeding) from the solids after around 24 to 48 hours, once we have determined that the colour is the pink we require.
