Fresh, crystalline & sharp, the first nose reveals a unique vegetal, aquatic world, with hints of white pepper & gardenia. The wines maturity then makes a gentle appearance before exhaling peaty accents. In the mouth, the attack is direct, a prelude to a lusty roundness that seem to curl up like a plant. The notes of anis & dried ginger glide over fruit skins (pear & mango), creating an effect that is more tactile than fleshy. The finale stretches out & then comes to rest, calm, mature & diffuse. To this day, Dom Perignon has retained its founders modern vision of true luxury: always excellent yet always improving. Richard Geoffroy, Dom Perignon Chef de Cave, is the man responsible for the constant reinvention of the wine. The making of each vintage involves a delicate job of assemblage & adjustment
- different each time
- before the mysterious balance between Dom Perignons white & black grapes (chardonnay & pinot noir) can be reached. This delicate exercise is full of risks. The assemblage of each Dom Perignon vintage is a creative act in the most inspired & daring sense of the term. The extra effort that goes into its making enables each vintage to express its unique character while affirming (through its singularity) the timeless style of Dom Perignon.

Nose: The immediate impression is of the mildness of the pure, airy, bright bouquet. A floral, fruity pastel tone then unfolds & quickly darkens into candied fruit, ripe hay & toasted notes, along with hints of licorice. Palate: The wine's opulence
- contained & succulent, round at heart
- reveals itself in the mouth. The envelope slides & stretches, & the wine becomes more complex & edgy, silkier than it is creamy. The whole eventually melts into an exquisite bitterness tinged with the briny taste of the sea The weather in 2006 was mixed, but warm & dry overall. While July was scorching hot, August was unusually cool & wet. The almost summery weather in September made the vintage possible by drying out the few patches of botrytis & maturing the grapes far more than usual. The harvest began on September 11 & lasted nearly four weeks.

Dom Prignon is vintage champagne only. Each vintage is a creation, singular & unique, that expresses both the character of the year & the character of Dom Prignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Prignon, the Plnitude of harmony. The 2008's opening bouquet is complex & luminous, a mingling of white flowers, citrus & stone fruit. The overall effect is enhanced by the freshness of aniseed & crushed mint. The final aromas offered by the wine are starting to show spicy, woody & roasted notes. After a long period of reluctance, the wine is finally opening up. There is a complete balance between the nose & the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced & clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky & highly promising. The wine enjoys duality: warmth & freshness, meat & iodine pairings, cooked & raw. Spices enhance & accentuate 2008s effervescence & densify the wine. Dom Prignon likes playful experiences: culinary art, textures, & matters. ...
