Fresh, crystalline & sharp, the first nose reveals a unique vegetal, aquatic world, with hints of white pepper & gardenia. The wines maturity then makes a gentle appearance before exhaling peaty accents. In the mouth, the attack is direct, a prelude to a lusty roundness that seem to curl up like a plant. The notes of anis & dried ginger glide over fruit skins (pear & mango), creating an effect that is more tactile than fleshy. The finale stretches out & then comes to rest, calm, mature & diffuse. To this day, Dom Perignon has retained its founders modern vision of true luxury: always excellent yet always improving. Richard Geoffroy, Dom Perignon Chef de Cave, is the man responsible for the constant reinvention of the wine. The making of each vintage involves a delicate job of assemblage & adjustment
- different each time
- before the mysterious balance between Dom Perignons white & black grapes (chardonnay & pinot noir) can be reached. This delicate exercise is full of risks. The assemblage of each Dom Perignon vintage is a creative act in the most inspired & daring sense of the term. The extra effort that goes into its making enables each vintage to express its unique character while affirming (through its singularity) the timeless style of Dom Perignon.

Nose: The immediate impression is of the mildness of the pure, airy, bright bouquet. A floral, fruity pastel tone then unfolds & quickly darkens into candied fruit, ripe hay & toasted notes, along with hints of licorice. Palate: The wine's opulence
- contained & succulent, round at heart
- reveals itself in the mouth. The envelope slides & stretches, & the wine becomes more complex & edgy, silkier than it is creamy. The whole eventually melts into an exquisite bitterness tinged with the briny taste of the sea The weather in 2006 was mixed, but warm & dry overall. While July was scorching hot, August was unusually cool & wet. The almost summery weather in September made the vintage possible by drying out the few patches of botrytis & maturing the grapes far more than usual. The harvest began on September 11 & lasted nearly four weeks.

Dom Prignon is vintage champagne only. Each vintage is a creation, singular & unique, that expresses both the character of the year & the character of Dom Prignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Prignon, the Plnitude of harmony. The 2008's opening bouquet is complex & luminous, a mingling of white flowers, citrus & stone fruit. The overall effect is enhanced by the freshness of aniseed & crushed mint. The final aromas offered by the wine are starting to show spicy, woody & roasted notes. After a long period of reluctance, the wine is finally opening up. There is a complete balance between the nose & the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced & clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky & highly promising. The wine enjoys duality: warmth & freshness, meat & iodine pairings, cooked & raw. Spices enhance & accentuate 2008s effervescence & densify the wine. Dom Prignon likes playful experiences: culinary art, textures, & matters. ...

After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Prignon, the Plnitude of harmony. On the nose: Notes of guava & spicy green grapefruit zest combine with stone fruit: white peach & nectarine. The wine opens up, with the whole complemented by woody vanilla & warm, lightly toasted brioche. On the palate: The fruit is majestic: ripe, fleshy & profound. Beyond the richness & a certain voluptuousness is a strong impression of consistency that prevails. The wines power is remarkably restrained. The various sensations silky, salty, sappy, bitter & briny converge & persist. Food pairing: Dom Prignon Vintage 2009 is a wine that needs to be excited. It needs a framework, it appeals to be stretched with contrasts. The champagne reaches out to the vegetable & mineral worlds, calling out by sea urchin carbonara with cardamom mousse. It works brilliantly when it has something to chew on: octopus marinated in Sicilian orange juice & roasted in butter. ...

Limited stock. Dom Perignon is unique in that a proportion of every vintage is retained & aged within the cellars. This allows each new generation of winemakers to taste older vintages, to understand the history of wine, to ensure greater consistency of style & to observe how each vintage develops & matures with age. The cellar area dedicated to the storage of these older vintage wines is called OEnotheque (or, as the French say en 'o' teque) which means ' Wine Library'. Dom Perignon peaks at three distinct times during its life cycle, although the timing of the peaks may ary from vintage to vintage. The first peak ('phase de plenitude' in French) at about seven years, is the stage when the wine is at its most vibrant & the majority of the vintage is released into the market. The second peak usually occurs between fourteen & twenty years & is the stage when the wine takes on greater depth & vigour. The third, from 25 years onwards, is when the wine reaches full maturity & takes on an extra dimension of complexity. Dom Perignon occasionally releases small quantities of the OEnotheque wines when they reach a peak in their quality. Kept undisturbed in their original bottles in the Hautvillier's cellars, these wines offer a rare opportunity to experience mature Champagne aged in perfect conditions. ...
