Located in the south of Burgundy, in the Maconnais region, the Pouilly Fuisse Appellation is situated where the relief becomes more marked, around the rocky cliffs of Vergisson & Solutre-Pouilly, on the slopes of Mount Pouilly & the cirque of Fuisse, on the Beauregard plateau & the heights of Chaintre. ' Les Cras' is a wellknown ' Climat' located on the windy & chalky plateau of Beauregard, from the village of Solutre-Pouilly. The thin, shallow soils lie on Jurassic calcareous layers. Some clay veins appear here & there. The name ' Cras' means chalk in our local dialect. Chateau de Beauregard owns almost 4 ha of ' Vers Cras' & produces about 10 000 bottles of this prestigious Pouilly-Fuisse. The aromas & the flavours reveal the mineral (chalk) & the vegetal (fern, boxwood). Here, the Terroir overpass the fruit expression. The finish is balanced & rich. This wine is complex & subtle. The best moment to drink this wine depends on the natural acidity of the vintage. In the best vintages, our Pouilly Fuisse ' Vers Cras' evolves more than 10 years when stored properly. Food matching Serve between 12 & 15 Deg C in fine crystal glasses. ' Les Cras' will enhance scallops, grilled or 'en sauce' fish, poultry (poulet de Bresse a la creme), 'quenelles' & 'andouillettes' & of course goat cheese from the Maconnais.
