Harvest: Each plot is h&-harvested between 15th September & 15th October. This is harvested late because of the altitude & the nature of soils. Winemaking: Grapes are destemmed & maceration lasts around 4 weeks. Extractions are carried out by pumping-over. Temperatures does not exceed 32 Deg C. Maturing: 10% of the wine is aged in oak casks & the remain in concrete tanks.
