A great generosity of flavour & velvet fruit reined in by the fine chalky tannins on the finish. The 2004 vintage is held in high regard in the Barossa, giving red & white wines of excellent regional & varietal character. Premium Cabernet Sauvignon vineyards in Light Pass & Tanunda districts of the Barossa Valley. Fermented & macerated on skins for up to 2 weeks with some partial barrel fermentation. Following pressing & clarification, the wine was matured in French oak hogsheads for Approx. 18 months. Mentor is an ideal accompaniment for rich duck, goose & game dishes. It is superb with oxtail, braised lamb shanks & wonderful with a fine aged cheddar. Grape: 63% Cabernet Sauvignon, 21% Merlot & 16% Shiraz.
