Eight Songs Shiraz was born of our love of art & music & inspired by an operatic work, ' Eight Songs for Mad King', first performed in the Barossa in 1993. The Barossa stands amongst the great wine regions of the world. From this region, Shiraz can express diversity in flavour, style & texture. The diverse terroir of our growers' Barossa vineyards is reflected in the character of our wines. Soils, elevations & vine age vary from one vineyard to the next. The heart of Eight Songs lies in the old Shiraz vineyards spread across the landscape of the Barossa. During the vintage, we walk these vineyards, which typically yield less than 2.5 tonnes per acre, tasting the fruit, seeking the concentrated flavours we need for this style of Shiraz. With Eight Songs we show an elegant & distinctly softer side to Barossa Shiraz. Fermented & matured in 100% new French oak hogsheads the palate shows dark plums, choc/ mocha notes with hints of vanillin undertones. The seamless integration of opulent fruit & velvety tannins creates an elegant expression of Barossa Shiraz at its sensuous best. A densely coloured shiraz showing hints of dark chocolate & black fruits. The palate is rich & soft, finishing with very fine tannins in the Eight Songs tradition. While drinking beautifully now, this wine can be cellared with complete confidence for a few more years as desired & it is recommended that the wine be carefully decanted 2-3 hours before serving, to allow it to open up. Eight Songs Shiraz sings with rare roast beef, rich casseroles, beef & game pies, & of course, a great aged cheddar.
