Pale gold with fresh lime green flashes around the edge. Aromas of full tropical fruit, yellow pepper, & herbal fynbos grassiness. Green pineapple, good balance of fruit & acidity, zippy. Enjoy with Hot Smoked Trout with Dill mayonnaise, Tuna Carpaccio, Squid Ink Pasta with chili & garlic. Grapes hand harvested from selected vineyard blocks. Grapes received at cellar, de-stemmed, slightly crushed before pressing, given short skin contact & pressed. Free run juice settles in tank overnight. The following morning, the clear settled juice, of the individual block selections (some kept separate & some blended) are racked from their lees & inoculated with selected yeast strains. Fermentation is temperature controlled. Only the best tanks are selected for the final preparation of the blend according to the style of the wine.
