Softened by 2 years in barrel, this lovely wine is aromatic & spicy delivering rich fruit on the savoury palate with an elegant & complex finish. A selection of the best grapes from our Rioja Alta vineyards around the village of Villalba were hand harvested into small 30kg boxes. Prior to starting the alcoholic fermentation, the whole bunches of grapes were cooled down & kept at a low temperature for some hours in order to better control the fermentation without using any additives & to achieve the optimum extraction. The fermentation took place in a combination of oak vats & stainless steel tanks at controlled temperatures. The wine was then aged in both American & French new oak casks for two years before being bottled followed by another two years in bottle prior to its release to the market. ...

Intense ruby red, bright & deep in colour. Rich, deep aromas of bramble, red autumn fruit with a hint of balsamic & warm spices from fine oak. The palate is fine, complex & long, with balanced tannins & an excellent bright finish. 85% Tempranillo, 5% Garnacha, 5% Mazuelo, 5% Graciano. The grapes were hand picked from selected vineyards &, following destalking, they were fermented at controlled temperatures between 28 & 30 degrees C. Following a full malolactic fermentation to balance the acidity, & to round & soften the wine, it was matured for two years in a mixture of French & American oak, with rackings every six months. After bottling, the wine was cellared for a year before release. ...

Attractive light raspberry pink colour. Full of ripe summer fruit & berry aromas with some floral hints. Light & refreshing mouth feel followed by a good length & complex finish. Best if served at between 12 to 14C. Pairs well with salads, pasta, rice, chicken & salmon. We harvested our carefully selected Tempranillo grapes at optimum ripeness to achieve a high level of aromatic extraction & a good concentration. The grapes are held in stainless steel tanks at low temperature to prevent the start of fermentation. The juice is removed (saignee or bleeding) from the solids after around 24 to 48 hours, once we have determined that the colour is the pink we require. The fermentation is then carried out without the presence of seeds or skins at a controlled temperature of 16 to 18C for around 8 days to obtain the required fruit levels in the wine. ...

Light toasty & biscuity flavours from the oak & the lees, with hints of cinnamon over grapefruit on the finish. Beautifully balanced. This rich dry white has been fermented in oak to give it a kiss of toasty richness that is balanced by crisp, fresh, citrus characters. A manual selection of grapes at their optimum point of ripeness. Once in the winery, the grapes are cold macerated for 6-8 hours to give more structure & flavour to the finished wine. The grapes are then lightly pressed & the juice transferred to new american oak casks for fermentation between 16
- 20°C. The young wine remains on its lees which are periodically stirred through the wine so that they remain in suspension. The wine is regularly tasted to assess its flavour evolution until the winemaker decides upon the optimum moment to rack & bottle it.
