Attractive light raspberry pink colour. Full of ripe summer fruit & berry aromas with some floral hints. Light & refreshing mouth feel followed by a good length & complex finish. Best if served at between 12 to 14C. Pairs well with salads, pasta, rice, chicken & salmon. We harvested our carefully selected Tempranillo grapes at optimum ripeness to achieve a high level of aromatic extraction & a good concentration. The grapes are held in stainless steel tanks at low temperature to prevent the start of fermentation. The juice is removed (saignee or bleeding) from the solids after around 24 to 48 hours, once we have determined that the colour is the pink we require. The fermentation is then carried out without the presence of seeds or skins at a controlled temperature of 16 to 18C for around 8 days to obtain the required fruit levels in the wine. ...

- 20°C. The young wine remains on its lees which are periodically stirred through the wine so that they remain in suspension. The wine is regularly tasted to assess its flavour evolution until the winemaker decides upon the optimum moment to rack & bottle it.

This elegant Rioja is rich, warming & velvety with beautifully integrated oak producing a fine & complex wine with great length. Deep ruby & cherry red with the slightest hint of a terracotta rim. The length of time that the fermenting juice is kept in contact with the skins is determined by daily tasting & analysis until the desired levels of colour & structure are reached. The young wine is then transferred to a mix of American & French oak casks to mature for up to two years before being bottled.
