Colour- Dark crimson. Bouquet- Intense Margaret River characters of blackcurrant, ripe berries, sage & bay leaf. Palate- Opulent blackberry & sweet plums, long & satisfying with integrated French oak & structural chewy tannins. Cellaring Potential- 10 years. Vinification- Grapes immediately crushed to static fermenters for ferment. Pumpovers occurred 4 times a day for 8 days before gentle pressing, malo-lactic fermentation & then the wine was racked to a range of new & mature oak. During maturation, the blend was periodically racked & returned to oak for 18 months prior to filtration & bottling. Serving Suggestions- Roasted fillet of beef served with a cabernet sauce.
