Pike Creek is matured in a warehouse in Pine Creek, Ontrario, Canada, which is non climate-controlled, with no electricity in an erratic northern weather system which has dramatic seasonal swings in temperature, where the barrels shrink in the coldest of winters, & swell during the hot summer months. Again this is absolutely typical of this noble Tuscan variety. Deep red in colour with attractive aromas of crushed violets, black cherries & dark chocolate, with a just a touch of “charry” French oak complimenting the fragrant fruit characters. A medium bodied palate of ripe, dark fruits, leafy Cabernet & a little dark chocolate sit nicely with the very soft tannins, subtle oak & balanced acidity. Quite an elegant wine. Palate- Opulent blackberry & sweet plums, long & satisfying with integrated French oak & structural chewy tannins. Cellaring Potential- 10 years. Vinification- Grapes immediately crushed to static fermenters for ferment. Pumpovers occurred 4 times a day for 8 days before gentle pressing, malo-lactic fermentation & then the wine was racked to a range of new & mature oak.
