Taylor's 20 year old is one of the most respected producers of aged tawny port wines. The 20 year old is fully matured in seasoned oak casks each holding about 630 litres of wine. The name ‘ Tawny' is given to port because of the colour that it goes after aging. It is a dark amber colour & as the colour changes so does the flavour of the port. Taylor's is one of the few remaining houses that still make a 40 year old port. After each vintage, a reserve of very concentrated & powerful red ports are laid to one side to age in oak casks. Those that have reached their peak after forty years are then blended together for balance & finesse & to ensure consistency of quality & style. The Grapes used for the 40 year old are grown on Taylor's own properties & consist of Touriga Nacional, Touriga Francesa, Tinta Roriz, Tinta Barroca, Tinta Cao & Tinta Amarela. Only very small quantities of this wine are made each year & after decades of evaporating & ageing in wood, the wine is concentrated to almost an essence. Chip Dry White Port is a stylish & sophisticated aperitif, the perfect introduction to a relaxed meal. It is best served chilled in a large port glass & accompanied by marinated olives or roasted almonds. Taylor's pioneered dry white port in 1934 & since then it has acquired a devoted following throughout the world. Chip dry is made from selected dry white ports produced from grapes grown in the Douro Superior, the eastern area of the Douro Valley. The predominant grape used in Taylor's Chip Dry port is the Malyasia Fina grape which is blended with a variety of other white grapes. Taylor's Chip Dry is produced using the traditional port wine vinification method, brandy being added to halt fermentation & to preserve some of the grapes natural sugar in the finished wine. For chip dry ports, the brandy is added later, when much of the sugar has been converted into alcohol producing a port of unusual dryness. The port is then aged for several years in oak vats & careful blending completes the fresh fruit flavours with an elegant, complex nuttiness. Only produced in limited quantities, chip dry white port is sold in individually numbered bottles marked with the name of the cellar in which the wine was aged.
