Each individual component of this blend (Oloroso & Pedro Ximenez) is aged in its own Solera. After blending, the wine is further aged for three years in a solera of 33 American oak casks before bottling. A dark mahogany colour with bronze hues. Concentrated aromas of ripe fruits, mocca, cocoa & toffee. Very complex on the palate, with a clean acidity & flavour of raisins, nuts, crystallized orange & candied peel. Food pairings: Ideal with rich cakes, egg based puddings & blue cheeses (Stilton, Gorgonzola). Also as an ideal digestif for the sweet-toothed.
