The colour is beautiful dark cherry with a rich garnet rim. The nose is all deep chocolate, dark forest fruits with some spicy notes. The palate is richly opulent, beautifully structured with layered, fully integrated tannins supporting the depth of fruit. It is truly a Royal wine from a great red wine vintage year. It is a limited edition classical Barossa Shiraz from low-yielding vineyards. Low yielding, mature shiraz vineyards in the Stonewell & Light Pass districts of the Barossa Valley. Fermented & macerated on skins for up to 2 weeks with some partial barrel fermentation. Following pressing & clarification, the wine was matured in French oak hogsheads for Approx. 18 months. Eight Songs Shiraz sings with rare roast beef, rich casseroles, beef & game pies, &, of course, a great aged cheddar. Eight Songs Shiraz was born of our love of art & music & inspired by an operatic work, Eight Songs for Mad King, first performed in the Barossa in 1993. The Barossa stands amongst the great wine regions of the world. From this region, Shiraz can express diversity in flavour, style & texture. The diverse terroir of our growers Barossa vineyards is reflected in the character of our wines. Soils, elevations & vine age vary from one vineyard to the next. The heart of Eight Songs lies in the old Shiraz vineyards spread across the landscape of the Barossa. During the vintage, we walk these vineyards, which typically yield less than 2.5 tons per acre, tasting the fruit, seeking the concentrated flavours we need for this style of Shiraz. With Eight Songs we show an elegant & distinctly softer side to Barossa Shiraz. Fermented & matured in 100% new French oak hogsheads the palate shows dark plums, choc/ mocha notes with hints of vanillin undertones. Still very lively and fresh showing good citrus notes also hints of macadamia nut characters and beginnings of a light smokiness as a consequence of bottle development. Still a remarkably tight, zesty and youthful wine with a superb structure and length. Time in the bottle has deepened the lime citrus and honey dew fruit flavours which fill out the mouth while finishing clean and dry. With careful cellaring, this wine will continue to develop in the bottle for a further ten years. It is very food friendly wine and is a superb accompaniment to fuller flavoured sea food dishes, asparagus and is one of the rare wines which pairs well with fresh tomato soup! The grapes are picked early & fermented cold in stainless steel tanks. Following a 2 week fermentation period, the wine is
clarified and bottled immediately before being cellared at the winery.
